Position Summary: Development Chef for Airport Lounge Network
We are looking for an experienced Development Chef to lead our food & beverage program, enhancing guest operations across our Americas lounges. Serving approximately 2 million guests annually, this role is pivotal in delivering top-notch culinary experiences.
Key Responsibilities
- Develop and implement exceptional Food and Beverage offerings across our US lounges, ensuring consistency and quality.
- Stay updated with market and food trends to ensure offerings remain relevant, incorporating local flavors across lounges from East to West coast.
- Enhance operational delivery processes through constant improvements, supporting Heads of Operations to maintain excellent stock control and minimizing food waste.
- Manage documentation for caloric, nutritional, allergy information, and compliance with HACCP, COSHH, and food legislation.
- Develop seasonal menus, upgrade existing ones, and manage quarterly changes, providing thorough training to Lounge Managers and kitchen teams.
- Utilize customer experience scores and feedback to refine products continuously.
- Oversee kitchen and bar equipment requirements, coordinating with partners for business growth.
- Research, analyze, and draft reports supporting business development and strategic planning.
- Conduct planning and estimation activities for accurate and profitable management plans.
- Ensure proactive issue resolution and effective performance management in food and beverage operations.
- Spend approximately 40% of time in lounges, training teams and engaging with local suppliers.
- Participate in RFP response teams, preparing compelling menu proposals and presenting to airport authorities.
- Support kitchen design for new locations, maintaining high standards and consistency.
- Offer legislative and commercial advice to aid effective decision-making and issue resolution.
Skills and Experience Required
- 3+ years in an operational/commercial/account management role with 24/7 operations experience.
- 5+ years as a chef with development kitchen experience.
- In-depth knowledge of high-volume food production, handling, and cost management.
- Experience in food delivery and customer service in mid/high-end establishments.
- Strong understanding of contractual terms, costing, pricing, estimating processes, and diligence requirements.
- Proficient IT skills, including business information tools and processes.
- Excellent time management and the ability to write clear specifications and training documents.
- Willing to travel up to 25% to various Escape Lounge locations nationwide.
Preferred Skills and Experience
- Experience in airport lounges or the travel and hospitality industry.
- Proficiency in Microsoft Office 365.
- Relevant vocational qualifications or progressing towards higher-level qualifications.
